Roux sauce, heat the butter until it has melted, add the flour and whisk until small balls form. Remove from heat and water and continue to whisk (making sure that no lumps are formed). when the mixture is well with no lumps bring back to heat and continue mixing.
When the mixture is thick remove from the heat and add milk, salt and pepper and continue whisking for three minutes. Leave it aside and add 2 tbsp of fresh parsley
In a saucepan, add your peppers with chicken (cut them to be in cubes) and half a cup of water
Add the seven colours spice, and chilli powder, cook at medium heat for 20 minutes. If the mixture gets dry add 1/2 cup of water
Add mushrooms to the mixture and sour cream, and stir for another 3 minutes
In a different pot pour 3 cups of boiling water, penne and 1 tbsp of oil. Let the penne cook until it's soft. Drain the water
Add the roux sauce to the chicken
Add the chicken to the penne
Mix well and serve hot. You can add sour cream and pesto for serving
