Grate the onion and garlic.
Place the minced meat in a deep bowl and add the chopped onion, garlic, salt, cumin, cayenne pepper, paprika, black pepper and sunflower oil. Mix everything together, cover and put in the fridge.
Mix the flour together with the yeast, sugar, salt, sunflower oil and water and knead for about 10 to 15 minutes. The dough is a little sticky, so add the extra 15 ml of sunflower oil at the end. Knead together for a minute. Cover and let the dough rise in a warm place for an hour or until it has doubled in size.
Grease the workplace with some sunflower oil and divide the dough into 15 pieces. Make balls of it.
Flatten the dough balls and shape it into an oval. Cut vertical slices at the bottom of the dough. Top with minced meat and roll the bun shut.
Place the buns on a parchment-lined baking tray. Cover the dough with some egg yolk. Garnish the buns with nigella seeds. Let the buns rise for 30 minutes.
Place the rolls in a preheated oven at 190 ℃ for about 23 to 30 minutes. Keep in mind that every oven works differently and they may be able to get out sooner or later.
When the bread rolls come out of the oven place a tea towel on top to keep them soft.
