  8. Take 1 inch - Cinnamon stick

  14. Get 2 - Green chilli
  15. Make ready 7 - Cashew nuts
  16. Make ready 2 tsp - Ghee
  17. Prepare 2 tsp - oil
  18. Take 2 - Bay leaf
  19. Get 1 tsp - biryani masala powder
  20. Prepare 1/2 tsp - garam masala powder
  21. Prepare as per taste Salt
  22. Take 1 tsp - coriander leaves (chopped)

Carrot Rice, a quick and easy to make rice variety that is not only appetizing but also so yummy. This Carrot rice is a way to make our kids love healthy carrots. Its a perfect Kids Lunch Box Recipe. finally. serve carrot rice with raita or as it is. Cook the rice and let it cool.

Instructions to make Carrot Rice:
  1. Clean rise and soak for 15 min, later take a vessel add ghee+oil once it heat one spices mentioned under for rice. Fry it till get spices flavour. Then add water once it boiled, add soaked rice and cook it.
  2. Peel carrot slightly and grate carrot, chop onions roughly and slit green chillies keep it ready.
  3. Once rice is ready, spread it on plate and 1/2 tsp of oil if you feel rice is not fluffy.
  4. Take a pan add peas and water boil till peas cooked smoothly. If you are using fresh peas. No need to boil if you are using frozen peas.
  5. Take a pan add 1 tsp Ghee + oil fry cashew nuts till changes colour.
  6. Then add green chilli, bay leaf, onions fry it by adding salt till onions changes colour.
  7. Now add grated carrot mix everything well and cook it till carrot becomes smooth by closing lid.
  8. Now add boiled peas to the above and mix everything well and cook it for few minutes.
  9. Later add biryani and garam masala powders to the above and let it cook for few minutes.
  10. Then add cooked rice, 1 tsp of ghee to the above, saute everything well by adding coriander leaves.
  11. That's it yummy, delicious and healthy Carrot Rice is ready to serve.
  12. We can have it with any dry/gravy curries, panner recipes or with any raita's. I had with malai matar paneer.

Its a perfect Kids Lunch Box Recipe. finally. serve carrot rice with raita or as it is. Cook the rice and let it cool. Put the carrots in warm water. Grate it without peeling the skin. Fry till the carrots are cooked.
