  1. Make ready 1 pack grape tomatoes (sliced/halved)
  2. Get 1 large onion (sliced)
  3. Make ready 1 lb smoked hot sausage links (pre-cooked, sliced into coins)
  4. Get 1-2 jalapeños (sliced)
  5. Prepare 1 lb dry spaghetti
  6. Take 1 bunch chopped cilantro (divided)

  9. Make ready 5 cups water
Steps to make One Pot Mexican Pasta:
  1. Set aside half of grape tomatoes and half the bunch of cilantro
  2. Add sausage, onion, tomatoes, jalapeno, cilantro and seasonings to bottom of pot.
  3. Add water and spaghetti on top.
  4. Turn stove on med-high heat. Cover and bring to a boil.
  5. Once water is boiling remove lid and stir until water has dissipated. Remove from heat.
  6. Add remaining halves of tomatoes and cilantro.
