  1. Make ready 6 slices bacon
  2. Prepare 2 lbs potatoes
  3. Take 3 tbsp vegetable oil
  4. Prepare 1/2 tsp garlic salt
  5. Prepare 1/8 tsp black pepper
  6. Take 1/4 cup barbecue sauce (any flavor)
  7. Take 1 cup shredded colby jack cheese

  1. Bake bacon in 400 degree oven for 22 minutes, until brown & crisp. Drain well. Crumble.
  2. Increase oven temperature to 450 degrees.
  3. Cut potatoes into 1/4 inch slices. Put in bowl or gallon ziploc bag. Add oil, garlic salt, & pepper. Stir or shake until well coated.
  4. Arrange potatoes in single layer on baking sheets. Bake for 20 minutes or until lightly browned.
  5. Brush with barbecue sauce.
  6. Mix bacon, cheese, & parsley in bowl. Add some of mixture on top of each slice.
  7. Bake until cheese melts, about 5 minutes. Then serve.
