  1. Soak the beef in cold water for 10–20 minutes to soak out the red liquid (myoglobin) from the meat.
  2. Mix the soy sauce, honey, sugar, mirin, sesame oil, and black pepper to make the sauce.
  3. In a pot, cover the meat with water and bring to a boil for five to ten minutes until the meat is no longer red. Rinse the beef and the pot to remove all of the scum.
  4. Add 1½ cups of water, the ginger, and ⅔ of the sauce made in step 2. Boil over medium low, covered, for 30 minutes.
  5. Reduce heat to low and add the remaining sauce, the sesame seeds, and a little more water if needed. Let simmer for two hours or until the meat is tender.
