  1. Take I river trout
  2. Make ready fresh mixed herbs - parsley, sage, thyme, rosemary
  3. Prepare Olive oil
  4. Take Fresh vegetables - broccoli, parsley, leek,parsnip,carrot, red pepper
Steps to make Baked trout and vegetables:
  1. Heat oven to 180 degrees c
  2. Chop vegetables and place on ovenproof tray. Season with olive oil and salt and pepper (I added s little chilli too)
  3. Clean fish and fill cavity with mixed herbs. Rub with olive oil or butter and seasoning. Wrap in foil.
  4. Place fish on a tray and bake both fish and vegetables in the oven for approx. 30mins. ( depends on size of the fish. Rest for 5 minutes and serve. Note: this dish contains fish bones.
