  2. Prepare 3/4 cup corn syrup

  1. In a pot over medium heat, add sugar, corn syrup, water, and cream of tartar.
  2. Stir to combine then allow to come to a boil without stirring. Let mixture boil until it reaches 280-290 degrees. Remove from heat.
  3. Pour more than half onto a greased cookie sheet or silicone baking sheet. Add the food colouring to the small half and mix. Place coloured half into a warmed oven so it doesn't harden.
  4. Begin to lift the edges of the large half with a spatula until you can separate the whole thing from the surface.
  5. Stretch and fold the candy for approx 5 mins, it will become lighter and lighter as you fold it. Keep folding until it no longer gets any lighter.
  6. Repeat with the red candy. Only fold it a few times as you don't want the colour to change.
  7. Cut both red and white into two pieces. Put one of each into the oven to stay soft.
  8. Cut the red into two pieces. Roll the red and white candy into 1' logs. Place one strip of red on the top of the white log, and one strip of red on the bottom.
  9. Roll to join strip together. Taper one end by rolling and stretching to desired thickness and length and cut with scissors. Repeat until log is all used up.
  10. Twist each stick and make a crook on one end. Place somewhere to cool completely. Repeat with the rest of the candy.
