The ingredients needed to make Tex Mex Casserole:
  1. Get Tortilla chips (1-2 handfuls)
  2. Get Corn (frozen or canned)
  3. Get Black beans drained and rinsed (15oz)
  4. Get Diced and cooked chicken
  5. Prepare Mexican blend cheese
  6. Take Your favorite salsa
  7. Prepare Taco seasoning
Instructions to make Tex Mex Casserole:
  1. Preheat oven to 400°
  2. Place tortilla chips in large bowl and crush with hands. You want bite sized pieces.
  3. In same bowl pour in corn, beans, chicken, cheese, salsa and taco seasoning. Feel free to set aside cheese to sprinkle on top of casserole.
  4. Mix ingredients, being careful not to crush tortilla chips too much. (Folding the mixture works well.)
  5. Pour mixture into a 8 by 12 or 9 by 13 dish, cover tightly with foil and bake for 30 minutes. Enjoy!
  6. Optional but delicious: garnish with avocados, sour cream, scallions and /or tomatoes
