The ingredients needed to make Baked Potato Raita:
  1. Prepare 1 cup yoghurt
  2. Make ready 1 big potato
  3. Take 1/2 tsp sugar
  4. Make ready 1 tsp dates-tamarind chutney (optional)
  5. Prepare as needed Chat masala
  6. Get as needed Smoked paprika powder
  7. Make ready as needed Roasted cumin powder
  8. Take to taste Salt
  9. Take 5-6 mint leaves
Instructions to make Baked Potato Raita:
  1. Wash the potato well. Use a knife and poke all over it. Bake it in a preheated oven at 180 degrees for 20 minutes. I had some leftover baked potatoes that I have used.
  2. Cool the potato, peel it and make cubes.
  3. In a bowl whisk yoghurt lightly along with salt and sugar to make it lump-free. Add potato and chopped mint leaves, reserving a few to garnish.
  4. Transfer it to serving bowl, sprinkle cumin powder, chat masala and smoked paprika. Drizzle some tamarind chutney.
  5. Garnish with mint leaves and crunchy salted boondi just before serving.
