  2. Line a baking sheet with parchment paper. Preheat the oven to 400
  3. Dust work surface with granulated sugar. Place puff pastry sheet on work surface, sprinkle surface with some cinnamon sugar mixture to cover surface anout 3 1/2 tablespoons, press sugar mixture in by rolling with a rolling pin.

  7. Brush top with egg wash
  8. Sprinkle with Cinnamon sugar

  10. Pinch middle of each cookie to adhere gently
  11. Place 2 inches apart on prepared pan, bake about 10 to 14 minutes until golden, carefully turn over with a spatula and cook about 4 more minutes
  12. Transfer to parchment lined wire racks to cool. The parchment will keep them from sticking to the wire racks.
