  1. Get 2 full chicken legs (thigh and drumstick)

  12. Make ready 1 tbsp coriander powder

  14. Get Garam masala (coarsely ground)
  15. Prepare 5 cloves
  16. Take 5 peppercorns
  17. Take 1 inch Cinnamon stick
  18. Make ready 1 star anise
  19. Take 1 black cardamom
  20. Get 5 green cardamoms
Steps to make Dum Chicken Tangdi:
  1. To prepare the marinade, mix the curd and the ginger garlic paste.
  2. Add in the salt, red chilli powder, cumin powder, coriander powder, and the coarsely ground garam masala. Mix well.
  3. Add the chicken legs and mix until they are well coated. Marinate them for at least two hours, preferably overnight.
  4. Before cooking, wipe off the marinade from the chicken. Do not throw away the marinade.
  5. Heat the oil in a pan. Add in finely chopped onions and green chillies. Saute. Just as it is about to change color, add in the chicken legs and sear them on high flame till they colorize.
  6. Add in the marinade with about half a cup of water. Cover it with a lid and put it on dum on low flame for 20 minutes. You can also use aluminium foil for it just beneath the lid.
  7. Once the chicken is cooked, dry off the excess water.
  8. Dum Chicken Tangdi is ready to serve. Sprinkle on a bit of chat masala and serve with lemon wedges.
