  6. Get 1 piece Boiled potato
  7. Make ready 1/2 cup chopped Onion
  8. Prepare 1/2 tsp chopped green chillies
  9. Get 2 tbsp wheat flour
  10. Prepare 1 tbsp chopped coriander leaves
  11. Get 1/2 tsp rock salt
  12. Make ready 2 tbsp oil for frying
  13. Take 6 nos chopped cashew nuts
  14. Get For Hung Curd stuffing :-
  15. Prepare 1/2 cup hung curd
  16. Prepare to taste Salt
  17. Make ready 2 tbsp finely chopped onion
  18. Prepare 1 tbsp chopped coriander leaves
  19. Get 1 tsp red chilli powder
  20. Make ready For Fruits Infuse:-
  21. Take 1/2 cup finely chopped Guava
  22. Prepare 2 tbsp honey
  23. Take Pinch rock salt
  24. Get Pinch Red chilli powder
  25. Take For Decorations:-
  26. Prepare Mint leaves
  27. Make ready Cranberry

Instructions to make Mandia Jau with Sour Cream & Rajma Patties:
  1. Soak the ragi powder for 20 mnts in 2 cups of water. Drain the water. Pour the soaked ragi to 2 cups of water boiling with 1/2 tsp salt and stir it continuously till the Mixture thickens. The colour of the Mixture will change. ("Ragi Mixture")
  2. For Rajma Patties:- Mash the rajma (Kidney beans) then add grated boiled potato, chopped onion, chillies, coriander leaves, rock salt and wheat flour then mix it properly. Make a dough out of it. Then take 2 portions out of the dough and make a shape of Patties. Then spread crushed cashew nuts on a plate and roll the Patties on it. ("Rajma Patties")
  3. Pour oil on a pan and shallow fry it on both sides till light brown in colour. Then keep it aside. For hung curd stuffing, take hung curd and add rock salt, chopped onion, coriander leaves and red chilli powder. Mix it properly and keep it aside ("Hung Curd"). For Fruits infuse, heat a pan, add chopped Guava, honey, chilli powder (a pinch) and rock salt, and cook for 1 min ("Fruits Infuse").
  4. For Assembling it:- add the Ragi Mixture into a ring mould and once the Ragi Mixture cools down, it will take the shape of the mould, after which discard the ring. Then add the Hung Curd Mixture over it, then place the Rajma Patties and add the Fruits Infuse over the Rajma Patties. Decorate it with mint, cranberry and almonds. Ready to eat.
