Take 1 bowl Julienned Veggies like carrots, beans, Zucchini,Baby Corn

Get 2 tbsp oil
Take For Garnishing

Make ready As required Lemon Wedge
Steps to make Vegetarian Laksa:
Boil Noodles as per package instructions and drain water. Set aside.
Add the ingredients of the curry paste into the blender and grind to a smooth paste.
Steam the Julienned Vegetables until Al Dente and Drain the water.
Heat oil in a pan. Add the curry paste and cook till it releases oil. Now slowly add the coconut milk stirring continously. Add vegetable stock to adjust the consistency. Now add the salt, sugar, kafir lime leaves and bring it to a simmer on low flame.
Take a bowl. Plate a layer of the Noodles, the steamed veggies, and pour the curry over the noodles to the brim. Top with spring onions and peanuts and serve warm with a lemon wedge.
