Heat rest of oil in wok at a very low heat. Add garlic and fry for a minute until oil is fully garlic. Push the fried rice to the side of the pan to create a well. Pour the eggs into the well and cook, stirring gently, until nearly cooked.

  1. Into a pan boil a half a litre of water.
  2. Add 1 tbsp of oil. Then add 1tsp of salt.
  3. Then to the boiling water add 1 chopped tomato, chopped coriander, a handful of Peas, and 3 chopped carrots.
  4. Then add the 1/4kg rice cover the boiling rice and allow it to simmer till it cooks.
  5. Then to another pan put 1 tbsp of oil.
  6. Add the diced onions and fry till golden brown then add 1 chopped tomato.
  7. Fry for a few minutes and then add two broken eggs.
  8. Continue frying and mixing the cooked eggs. Don't allow the eggs to burn because the proteins might be denatured.
  9. Fry for 5 minutes.
  10. Into a different cooking pan put 1 tbsp of oil and add the chopped cabbage
  11. Fry for 3 minutes then serve.
  12. Then remove the Mango rind add chop the Mangoes into small cubicles.
  13. Put in the blender, add chilled water with 1 tbsp of sugar and blend
  14. Then serve while chilled together with the vegetables rice, Fried eggs and fried Cabbage.

Push the fried rice to the side of the pan to create a well. Pour the eggs into the well and cook, stirring gently, until nearly cooked. Heat the oil to smoking point in a large wok. Add the eggs and swirl with a ladle or spoon, breaking them up as they cook. When preheated, crumble cold leftover rice into the wok, add salt, pepper, and soy sauce, and stir to evenly coat.
