  3. Once the spinach is parboiled, chill in cold water, squeeze out any excess water, then cut into 5 cm lengths.
  4. Put the spinach from Step 3 into a bowl, then toss with the ● ingredients. Mash the tofu with your hands and mix it well with the spinach.
  5. Add salt (not listed) to taste, then serve.
  6. You can also cook the spinach in a microwave by wrapping it in plastic wrap after rinsing!
