Steps to make Mole De Olla:
  1. clean an devein all chiless, and cook them with water untill soft
  2. add oil to a deep pot, untill hot then add beef chuck and salt, cook until meat looks caramelized
  3. put the cooked chiles and the water they cook on, the onion and the garlic in a blender, blend it. and strain it, so all the chile skin will not end up in the soup
  4. once meat is caramelized, add the chile mix from the blender
  5. add more water until the meat is completely cover,add some epazote branches, let it cook in low flame for about 20 mins.
  6. add all vegetables, including xoconostle. if nessesary add water to cover the vegtables, cook for 20 more mins, untill vegetables are completely cooked.
