Puran poli is made from chana dal or split yellow gram, plain flour, jaggery or sugar, cardamom powder and/or nutmeg powder, ghee and water. With Puran Poli, typically there is a curry made from the water taken out of the cooked dal, in maharashtra we call "KAT CURRY", my favourite is Milk with ghee n sugar, or milk with jaggery added. Heat it over a flat pan & serve hot.

Steps to make Mango puran poli:
  1. Making of puran. In a microwave safe bowl, add condensed milk, mango pulp, almond powder and milk powder. Mix thoroughly and microwave for 2 minutes. - Repeat for 4 or 5 times taking it out and giving it a stir.
  2. Cook until the mixture becomes non sticky. - Add ghee, saffron and cardamom powder and stir and let the mixture cool. Set aside. Once cool make lemon size balls and refrigerate for at least 30 minutes.
  3. Method for dough:- - In a bowl add flour, turmeric, salt and oil. Rub well and add little water at a time and make a dough. Knead well to make a smooth and soft dough. Cover and set aside for 15 minutes.
  4. Method for making:- - Take a medium size ball from the dough. Roll it 2 to 3 inches in circumference on a dusted rolling board. Place a portion of puran mixture in the center of the rolled dough.
  5. Bring the edges together towards the centre and pinch them. Close and shape again like a ball. Sprinkle some flour and start rolling the dough.
  6. Make a medium puran poli as depending upon the size of the dough and puran you have taken. It should be rolled a bit thin and not thick. - Put a tawa on medium heat and place the rolled out puran poli on it. Add 1/2 teaspoon ghee and cook well from both sides. Serve hot
