The ingredients needed to make Baked Pumpkin:
  1. Take 1 butternut squash
  2. Prepare 4 tbsp olive oil

Steps to make Baked Pumpkin:
  1. Preheat the oven to 410F/210C. Line a baking sheet with parchment paper. With an average sized butternut squash you might have to bake it in two batches (or on two racks, switching them in the middle of baking).
  2. Cut the butternut squash into strips (0.5-0.75 inches thick). Start by cutting off the two hard ends. Then cut the pumpkin in half lengthwise and peel each half. Remove the seeds with a big spoon, then cut into strips lengthwise. Line the pumpkin strips on the baking sheet.
  3. Prepare the coating by mixing olive oil with garlic, thyme and a pinch of salt and pepper. Brush it on the pumpkin strips.
  4. Bake until tender. It will take about 20 minutes (but start checking the pumpkin with a fork after 15 minutes). Serve directly.
