Prepare 30 grams Butter
Take 50 grams Sugar

Instructions to make Sweet Potato Bites:
Peel the sweet potato, and slice into 1 cm thick rounds. Put into a pot with water, and boil until a bamboo skewer goes through easily.
Transfer to a sieve, and drain the water. Mash in a bowl while it's still hot.
Knead with butter. Add the sugar→ egg yolk→ heavy cream in that order, and mix each time. Add honey to your liking, and mix.
Transfer to a frying pan, and evaporate the water while mixing over medium heat. When the mixture starts to come together, remove from heat. Let it cool until you can touch with your hands.
Form into shapes. Roll between your hands, make a oval shape, then pinch both ends to make a sweet potato shape.
For the glaze] Brush with a mixture of the egg yolk and water. Bake in the oven at 180℃ for about 25 ~ 30 minutes until the surface lightly browns.
If the surface dries while baking, brush with the egg mixture one more time, and bake again. It will become lustrous.
